Gluten Free Fluffy Vegan Pancakes
Ingredients (modified from Tasty.co)
for 4 pancakes (2 servings)
- 1/2 cup gluten free flour (King Arthur)
- ½ cup of Oats Ground into flour (use coffee grinder)
- 1 tablespoon of flax ground (can grind with oats)
- 1 tablespoon baking powder
- ¼ Teaspoon of baking soda
- ½ teaspoon salt
- 1 cup non-dairy milk (we like Planet Oat – Unsweetened Original)
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla
Preparation
In a medium bowl, add the flour, flax seed, baking powder, baking soda, and salt, and stir to combine.
In a medium bowl or liquid measuring cup, add almond or oat milk, apple cider vinegar, and vanilla, and stir to combine.
Pour the liquid mixture into the dry mixture and whisk until smooth.
Let batter rest for 5 minutes.
Pour about ½ cup (65 grams) of batter onto a nonstick pan or griddle over medium heat.
When the top begins to bubble, flip the pancake and cook until golden.


Fat Free, Vegan Waffles
Vegan Waffles
For 4 Waffles
- 1 Cup flour (we like spelt)
- 1 Tablespoon Baking Powder
- ½ Teaspoon Salt
- 1 Cup non-dairy Milk (made in our Nama M)
- 1 Tablespoon Apple Cider Vinegar
- 1 Teaspoon Vanilla
Combine all of the dry ingredients and mix. Then combine all of the wet ingredients and mix. Then pour the wet ingredients into the dry and mix the total ingredients together into a batter. Once mixed, let the batter sit 5 minutes so the air bubbles cause the batter to rise. Using a preheated waffle iron at about 400 degrees. Pour the batter into the waffle spaces and then close the waffle iron and wait 7 minutes. Once the 7 minutes have passed you should have perfect waffles.
