A Very Simple and Quick Meal!
- This meal was made with enough Lentils and Brussel Sprouts for quick and easy leftovers. This it totally compliant
- 2 cups of Trader Joes Lentils boiled in 6 cups of water for 20 minutes
- 1 tablespoon of onion powder added to lentils while cooking
- 1 tablespoon of garlic powder added to lentils while cooking
- Your favorite BBQ Sauce (no oil) added to lentils to taste at end of cooking process
- Baked White Russet Potato (We bake in Microwave to make peel easy to remove)
- Steamed Brussel Sprouts (We steamed a whole bag of organic sprouts from Costco)
- Balsamic vinegar (Trader Joes Organic) added to sprouts to taste when served. Because I use hot BBQ Sauce and my wife doesn’t like the “hot” as hot as me, I add more sauce at the table.
General Tso’s Chickpea Stir Fry
This is modified from Claire Cary’s Original recipe to be vegan with “no oil”.
We make the changes noted:
Sauce Ingredient changes:
1/2 cup vegetable broth(we used Better than Bouillon vegetable base, 1/2 teaspoon and 1/2 cup of water)2 tbsp tomato paste(we use 4 tbsp Catsup)3 tsp toasted sesame oil(we do not use oil)
Stir Fry (we do this without oil):
1 tbsp oil
We follow Claire’s Instructions then,
We like to serve warm over baked potato (sweet, russet or Idaho), or rice and add steamed broccoli on top.
